good morning folks! Last year I used to have breakfast with a large bowl of budwig cream and I felt so good! So yesterday I decided it was time to get back to the old healthy habits... My version includes yogurt of course, walnuts, flax seeds, oats, honey and a piece of banana... Enjoy!
Buongiorno gente! L'anno scorso ero solita fare colazione con una grande ciotola di crema Budwig e mi sentivo così bene! Così ieri ho deciso che era il momento di tornare alle vecchie abitudini sane ... La mia versione include ovviamente yogurt, noci, semi di lino e avena, oltre a miele e un po' di banana...Buon appetito!

:: WatW :: homemade MUFFINS.
last weekend I decided that it was time to cook again… Well, I cook something every evening for the family, but I was looking for something more… elaborated than pasta or hamburgers. I love baking cakes and muffins, mainly because I’m always craving for something sweet. I wish I had had more time but, as always, I start working at the very last hour! I found these super easy and super quick muffins. They are made with whole wheat flour (125 gr), pastry flour (100 gr), brown sugar (60 gr), baking powder (8 gr) and a pinch of salt. Mix everything together and, in another bowl, add an egg, seed oil (50 gr), and skimmed milk (250 ml). Mix the two in the same bowl. I have add some red fruits ( blueberries, raspberries…) and chocolate on the top. Bake for 25 min at 180°C.
:: Lo scorso weekend ho deciso che era tempo di mettermi a cucinare di nuovo… Beh, cucino qualcosa ogni sera per la mia famiglia, ma volevo fare qualcosa di più… elaborato che una pasta o degli hamburger. Adoro cucinare torte e muffins, principalmente perchè sono molto golosa. Vorrei aver avuto più tempo, ma, come sempre, mi metto al lavoro all’ultimo secondo! Ho trovato questa ricetta super semplice e veloce per i muffins. Sono fatti unendo farina integrale (125 gr), farina 00 (100 gr), zucchero di canna (60 gr), lievito (8 gr), un pizzico di sale. A parte mescolare un uovo, olio di semi (50 gr) e latte scremato (250 ml). Unire i due composti. Io ho aggiunto anche dei frutti rossi (mirtilli, lamponi etc..)e un po di cioccolata sopra. Infornare per 25 min a 180°C.

MY FIRST CROSTATA.
for zoe’s birthday i cooked my very first strawberry tart. i’m so enthusiastic with the result! i thought that making the pie crust was difficult but turned out it’s not! i see more crostata in my future! that’s the recipe.
per il compleanno di zoe ho cucinato la mia prima crostata di fragole. sono così entusiasta del risultato! pensavo che fare la pasta frolla fosse difficile ma non lo è affatto! vedo molte crostate nel mio futuro!

MY GRANOLA BARS.
last weekend, rain + cold made me want to cook. i have to admit: that’s not a cooking recipe. yes, you have to toast oatmeal and seeds but it’s not ‘cooking’ right?
anyway, the recipe is very easy even if you need several ingredients:
100gr of oatmeal, 100gr of coconut flakes, 50gr of wheat germ, 70gr of sesame seeds, 70gr of pumpkin seeds, 70gr of sunflower seeds (i bought a mix of all the seeds in a local bio market), 100gr of raisins (not for me…i don’t like them!), 100gr of honey (even less), 80gr of butter and 60gr of brown sugar.
toast all the seeds for about 10 minutes. bring to boil honey, butter and sugar and let it cook for about 8 minutes. leave drop it in a glass full of cold water: if it becomes an elastic ball, it’s ready. mix everything together and pour it on a baking sheet. let it cool.
lo scorso weekend la pioggia e il freddo mi hanno fatto venire voglia di cucinare. devo ammetterlo: non è proprio una ricetta da cucinare. ok, si devono tostare avena e semi vari, ma non è ‘cucinare’ giusto?
comunque, la ricetta è, come sempre, molto semplice anche se servono molti ingredienti:
100gr di fiocchi d’avena, 100gr di cocco grattuggiato, 50gr di germe di grano, 70gr di semi di sesamo, 70gr di semi di zucca, 70gr di semi di girasole (ho comperato un mix di questi semi al biologico), 100gr di uvetta (non per me… a me non piace), 100gr (anche meno) di miele, 80gr di burro e 60gr di zucchero di canna.
far dorare in padella tutti i semi per circa 10 minuti. far bollire miele, burro e zucchero per circa 8 minuti. lasciar cadere una goccia del composto in un bicchiere di acqua fredda: se si forma una pallina elastica è pronto. mescolare il tutto, stenderlo su una teglia e lasciar raffreddare.

POTATOES and BROCCOLI PIE.
my husband is not a cooked-vegetables lover so deciding to cook a recipe like this one is always a challenge. plus there are broccoli, one of the less loved vegetable in the world, i think. but i won! they tried these pies and hubby said “delicious!”. zoe was less enthusiastic about them but she ate at least one and i’m satisfied. mio marito non è proprio un amante delle verdure cotte quindi decidere di cucinare una ricetta come questa è sempre una sfida. in più ci sono i broccoli, una delle verdure meno amate al mondo, credo. ma ho vinto! hanno provato questi tortini e mio marito ha detto “deliziosi!”. zoe era meno entusiasta ma ne ha mangiato almeno uno e mi ritengo soddisfatta.
mash potatoes and broccoli. add eggs, salt, oil, cheese and nutmeg and mix until you get a homogeneous mixture. oil and spread with breadcrumbs six molds before adding the mixture. bake at 180° for 20-25 minutes. [italian recipe here]
next time i will just add an heart of cheese… it will be perfect!

SAVOURY PIE (with YOGURT mixture!).
the pursuit of an healthy lifestyle has to go through the self-making, so i decided to try this recipe starting from the very beginning: the pie dough.
i found the recipe in this book (in italian) and it’s easy, fast and delicious!
i filled the pie with radicchio and robiola cheese and it was very hard for me and my husband not eating it all before dinner!!
you need:
250 gr of flour
1 spoon of bicarbonate
1/2 glass of yogurt
1/2 oil ( i used sunflower oil)
a pinch of salt
mix everything together until you have a smooth dough. roll it and fill it with your favorite ingredients.
easy right?!

MILLET & RED LENTIL SOUP
i’m trying to add more legumes and different cereals to our diet, in order to cut meat and discover new vegetarian dishes. i used red peeled lentils because they are more digestible for kids. alma loves it and zoe… well it’s not her favorite but experts say that a child must try the same food more then ten times to appreciate it, so…
the preparation is super quickly: fry slightly half onion and a carrot (we used water instead of oil), then add a pinch of salt and 2 lt of water. when it boils, add 200gr of lentils and 150gr of millet (wash them before) and let everything simmer for 20-30 minutes. i whisked it for alma and - believe me – she was enthusiastic!
you can see the original recipe here (the author suggests other ingredients such as kombu and miso but i didn’t have them).
