POTATOES and BROCCOLI PIE.

my husband is not a cooked-vegetables lover so deciding to cook a recipe like this one is always a challenge. plus there are broccoli, one of the less loved vegetable in the world, i think. but i won! they tried these pies and hubby said “delicious!”. zoe was less enthusiastic about them but she ate at least one and i’m satisfied. mio marito non è proprio un amante delle verdure cotte quindi decidere di cucinare una ricetta come questa è sempre una sfida. in più ci sono i broccoli, una delle verdure meno amate al mondo, credo. ma ho vinto! hanno provato questi tortini e mio marito ha detto “deliziosi!”. zoe era meno entusiasta ma ne ha mangiato almeno uno e mi ritengo soddisfatta.
the recipe is nothing less than easy:
300gr of steamed potatoes
150gr of steamed broccoli
2 eggs
60gr of parmesan cheese
olive oil
salt
breadcrumbs
nutmeg
 
mash potatoes and broccoli. add eggs, salt, oil, cheese and nutmeg and mix until you get a homogeneous mixture. oil and spread with breadcrumbs six molds before adding the mixture. bake at 180° for 20-25 minutes.  [italian recipe here]
next time i will just add an heart of cheese… it will be perfect!
